After buying a plot of land in 2012 and planting our new grape vines in 2013, we spent the 4 years (2013 to 2016), while the vines were gaining strength, getting ourselves ready. We bought small quantities of red and white grapes and we “practiced” making our own wines and preparing the Pipacs és Pillangó cellar and press house for full production. Since then we have been in full production. While we continue to buy grapes to make our white wines, we rely on our own vineyard to produce the red grapes. We were already familiar with making white wines but red wines were new for us and therefore, that was where we had the most to learn.



Red wines

One of the key differences about working with red wines is that they take longer to reach their peak and they have a much longer life. Not only do they mature while in the barrel but they also continue to improve for several years after they are bottled.
The extent to which red wines change during this maturation process is amazing; it is one of the wonders of wine making. It is a three to four year process to create a delightful red wine, with the wine-maker taking over from Mother Nature after the grapes are harvested. This intimate and intense involvement with the wines as they develop is so intense and exciting that it turns the hard work of wine making into a rewarding pleasure.

We have settled into a pattern of making three or four wines from our red grapes – Cabernet Franc, Merlot, Pillangó Cuvée and occasionally, Birtok Mélange. Having worked with them for several years now, we believe that Cabernet Franc and Merlot grapes are ideally suited to the climate and soil conditions of this wine region. Given that Mother Nature is in charge, each wine season presents different challenges. As new wine-makers, we have to be prepared to meet these seasonal challenges and be open to learning something new every year. This certainly keeps us on our toes!

Cabernet Franc is our premium wine; it is a smooth and subtle red wine with a depth of aroma and a slightly spicy taste that makes it ideal for drinking with a meal of meat or even firm flavoured fish. Cabernet Franc will not let you down.

Merlot is one of the world’s leading red grape varieties and it produces a full-bodied wine whose fruitiness explodes in your mouth and whose pleasing after taste lingers for a long time on your taste buds. It is a wine for all occasions, to be treasured with one of your favourite meals.

Pillangó Cuvée is a wine that we make each year by blending together our Cabernet Franc and Merlot wines. The precise proportions of each wine might vary slightly from year to year according to our judgement of what produces the best result. This blended wine will generally have a long bottle-life and will continue to thrill your palate for years to come.

Birtok Mélange is a wine that we produced first in 2016, when we had our first partial harvest from the vineyard, and again in 2019. We make it by blending together the different varieties of red grapes immediately after the harvest and before pressing. This is the method developed to make the famous fine wines of the Bordeaux region of France. It produces a full-bodied and long-lasting wine that is deep in colour and rich in taste. We are currently not making this wine every year but, as our 2019 Birtok Mélange is developing, we have become increasingly encouraged by the results.

Our Rozé wine

We also make a rosé wine which we have named Pipacs Rozé. We make the rozé from our Cabernet Franc grapes. It is an easy-drinking wine which is designed to be a flavourful aperitif that pleases and refreshes your palate, especially in the summer while you relax or chat with your friends, as the late afternoon sun approaches the horizon. Depending on the year, this wine can be full bodied enough to be an ideal companion for almost any meal. We believe that our 2020 rozé is such a wine. Come taste it and see if you agree.


Our white wines

In addition to our red wines, we make three white wines from grapes we purchase from growers in the Balatonfüred-Csopak wine region – Olaszrizling, Irsai Olivér and also Orio Cuvée that is made from a combination of those two wines. We selected those two white grapes because they are so characteristic of the north shore of Lake Balaton.

Olaszrizling (literally translated means Italian Riesling) is the staple white wine variety in the Balatonfüred-Csopak Wine Region of which Lovas is part. The origins of this grape variety are not clear and there are several different theories. It was believed that Olaszrizling came to Central Europe with the ancient Romans (about two thousand years ago) but recent studies suggest that it may have arrived in Italy, Austria, Hungary and Croatia from France as recently as the late 18th Century. Whatever the truth about its origins, this hardy grape variety has certainly found a perfect home on the north shore of Lake Balaton. Its reliability and flexibility make it consistently the most popular wine variety in this region. Olaszrizling is a dry white wine with a fruity after-taste that will stimulate your taste-buds. It is delicious when served as an aperitif with light snacks but it is also robust enough to accompany almost any type of food, from fish to chicken and pork, whether they are served grilled, fried or baked and whether breaded or served with a creamy sauce. You cannot go wrong with this delightful wine; it is indeed a wine for all occasions.

We absolutely love the outstanding fruitiness of the Irsai Olivér grape, which is a uniquely Hungarian grape that has a close association with Lake Balaton. This splendidly fruity wine has a pleasant dryness that keeps you coming back for more. This is a wine that should be served cold and consumed when it is young.
It is worth noting that the fruitiness of Irsai Olivér makes it an ideal partner with spicy foods – the fruitiness will not be overwhelmed by the spices. Try a glass of our Irsai Olivér; you will not regret it.

By blending together our Olaszrizling and Irsai Olivér wines, we created a cuvée that we named Orio Cuvée, a wine of which we are particularly proud. We believe that this wine accentuates the best of both grapes – it retains the fruitiness of Irsai Olivér, while still permitting the dryness and versatility of Olaszrizling to shine through.
